Let's make a lovely and simple shrimp fried rice.First put basmati rice to boil with water.
Cook till almost done, and drain water. Keep covered.
In a thick bottom pan or kadhai, heat 2 tablespoons of ghee. Fry cashew pieces and keep aside.
Then chop one onion into slices, add to pan, add whole cardamom, cinnamon stick, and cloves. Stir on low flame.
Gently stir the rice into the mixture. Add salt and sugar to taste. Sprinkle chopped coriander leaves. Add fried cashews.
