Healthy munchies for the Rains!

Come monsoon, and Indians start craving fried snacks. Bhajia, pakora, telebhaja, chops, the works.

Diet goes for a toss with pitter patter around. Still, we can make the munchies a bit healthy, can't we?

Bread pakora

Take some bread slices, fill these with boiled and mashed potato or crumbled paneer mixed with amchur and chilli powder. Join two together and cut diagonally. Dip in besan batter (chickpea flour mixed with salt, chilli powder and little water to make a thick paste).

Fry on a non-stick pan in two tablespoons oil. Once one side is done, turn it over and fry the other side. Check the sides and toast them by rotating.

Advantage is you aren't deep frying it. Remove to a plate after draining oil.

Grilled chicken 



In the mixer, blend 4 cloves garlic, olive oil, salt, pepper, oregano powder, chilli flakes, one tsp mustard. Add half cup coriander or parsley leaves. Marinade 3-4 flattened boneless chicken breast slices with this mixture. Cut some onions, half carrot and tomato in small chunks. Heat a grill pan, brush with oil, and add chicken. Once one side is slightly browned, turn the other side. Saute the vegetables along with the marinade. You can add boiled peas, beans and sliced potatoes too.

This recipe is absolutely low in oil, healthy and nutritional while being great in taste.
