Grilled/Fried Crispy Pomfret

Ingredients

2 large size pomfret fish, cleaned. Remove heads and tails, and slit with a knife on the side. Create small slits on both sides to let masala in.  You can cut the fish into halves or keep it whole.

Lemon juice 1 teaspoon

Ginger garlic paste 1 tablespoon

Salt and pepper 1/2 teaspoon each

Rice flour or besan 2 tablespoons

Sooji 1 tablespoon (this makes it crispy)

Chilli flakes 1 small sachet

Oregano 1 small sachet

Oil to fry/grill

Method

Mix all the ingredients except the flours and oregano, chilli flakes and oil.

Coat the entire fish well with this marinade, in between the slits and all over. Set aside for 2 hrs.

Heat oil in a grill pan, or frying pan.

Mix the flour, sooji, chilli flakes, oregano, and a pinch of salt.

Once the oil heats up, coat the fish in the mix and gently place in the pan. Let it sizzle. Cover and let cook for a minute. Then gently flip and let the other side cook.

Once both sides are nicely browsed, remove from oil.

Serve on a large plate with slices of lemon and rings of onions to garnish.
