Alur Dom/Alu Dum with a Twist!

Did you know your dishes can actually taste better if you cook them in an iron kadhai, instead of a non stick one?

I  didn't believe it until I tried out myself! The slow cooking on the iron utensil actually enhances the taste of vegetables or chicken. Try it out some day!

This is my recipe of Alu Dum (Bengali style) with a twist (read on to know more)!

Recipe of Alu Dum/Alur Dom

(The pic is not very good, having been clicked in a sweaty kitchen in a hurry.....But I can assure you about the lip-smacking taste!)


Ingredients

Small Potatoes - 250 -300 gms. boiled and peeled (if they are slightly large size, cut into halves or 1/4)

French Beans (This is the twist!) - 7-8 chopped very small

Onion - 1 large chopped

Tomato - 1 chopped

Ginger garlic paste - 1 tablespoon

Haldi, Kashmiri mirch, dhaniya, jeera powders - 1/2 teaspoon each

Whole Jeera - 1/2 teaspoon

Sugar - 1/2 teaspoon

Salt to taste

Ghee - 1/4 teaspoon at the end

Method/Process of Cooking

Take a kadhai (preferably an iron one), and heat 2 tablespoons of vegetable or olive oil. 

Add jeera, (you can add tejpata if you want), onions, beans, and stir till onions are light brown. The beans should be half cooked while stirring itself.

Add the boiled small potatoes. 

Next, into the kadhai, go the tomato cubes, and the ginger garlic paste. Keep stirring till tomato is mushy. 

Then add the powders and saute till a minute on low flame. Add salt and sugar.

Take care not to break the potatoes while stirring. By now, the whole dish will start to give a delicious aroma.  Add a little water and allow the masalas to cook with the potatoes for 5 minutes.

Add ghee, garam masala, and chopped coriander if you want.

Your alu dum/alur dom is ready! Relish with luchi/puri, or parathas or even rice.

Note: The French beans add a nice crunch to the dish. If you don't prefer beans, you can give peas or capsicum cubes.
