Homemakers or even singletons are hard-pressed for time these days. So many things to do, so little time. Who has the time or inclination to spend hours in the kitchen, labouring over complicated recipes?
So, here's something that can be ready in a jiffy! What's more, it has the goodness of #Okra or ladies finger, something kids (and their parents) don't want to eat easily. And it's finger-licking good to taste too!
Ladies Finger/Okra/ Bhindi : 100 gm, chopped into small pieces
Potato : 1 Large (sliced length-wise into thin strips)
Onion: 1 Large (sliced length-wise into thin strips)

Ingredients
Ladies Finger/Okra/ Bhindi : 100 gm, chopped into small pieces
Potato : 1 Large (sliced length-wise into thin strips)
Onion: 1 Large (sliced length-wise into thin strips)
Tomato : 1 medium, cut into small slices
Cumin Whole (Jeera) : 1 teaspoon
Haldi, Chilli, Dhaniya, Jeera Powders: 1/2 teaspoon each
Amchur Powder : 1/2 teaspoon
Salt to taste
Coriander leaves for garnishing
Procedure:
Heat oil in pan/kadhai, and stir-fry the okra and potato pieces well. Remove from pan.
Add oil, and when heated, add whole jeera, and sliced onion.
When the onion has lightly browned, add tomato pieces.
Stir well and saute properly. Add the fried okra and potato pieces to the kadhai/pan.
Mix the dhania, haldi, jeera, chilli powders with the okra and potato mix.
Add salt to taste, and a little water. Cover and cook for five minutes.
Sprinkle amchur powder over the mix.
Garnish with coriander leaves and remove from heat.

Tip>> Make sure the okra and potato pieces are cut finely before adding to the oil. Since the whole dish is stir-fried, the cutting finely is important.
