Who doesn't like #ChineseFriedRice - full of the flavours of soya and garlic, and the goodness of colourful vegetables and egg or chicken? Combine it with a chicken or prawn dish, and you have a complete meal in itself.

My family and I love Chinese food, and crave it every now and then. Why always order it from restaurants? I decided to make a healthy version of Chinese-style garlic chicken and fried rice right at home. After searching for suitable recipes, I decided to adapt a recipe of #ChickenInGarlicSauce, published by celebrated food writer, #NitaMehta. The fried rice recipe has again been sourced from the net, with a few tweaks here and there.

Point is, if you want to, you can easily make restaurant-style #ChineseFood at home.

Recipes

For Chicken in Garlic Sauce

  • Take 200 gms. small cubed boneless chicken.
  • Marinade the chicken at least for an hour in salt, pepper powder, crushed garlic, and an egg mixed with plain flour and cornflour
  • Make pakoras (dumplings) before cooking in sauce
  • Keep the soya sauce, chilli sauce, vinegar and tomato ketchup handy for making the sauce. 
  • Remember to use freshly ground black pepper (it adds incredible flavour) or chilli flakes
  • Use freshly chopped ginger and garlic, not the ready-made paste available at counters
  • Use spring onion bulbs for cooking, and spring onion greens for garnishing.
  • Always add capsicum pieces after the onion and garlic is sauteed, and other vegetables have been stir fried.Capsicum loses its crunch on being cooked too much
  • Add cornflour mixed with water to make the gravy thick.

For Vegetable Fried Rice (Chinese Style)

  • Boil a cup of rice till almost cooked
  • Heat vegetable oil, add finely chopped garlic. onions, carrots and beans while stir frying. 
  • Add sliced capsicum and stir fry.
  • Add soya sauce and vinegar after adding the boiled rice for making fried rice. 
  • If you are making chicken fried rice, toss the shredded chicken in oil first. For egg fried rice, beat two eggs and add to the pan and stir with the veggies. Salt and pepper needs to be added at the end.
