Sometimes you are too tired or bored to cook eggs in a traditional curry, and want to try something different. Or you just want to get your cooking over in a few minutes.

Here this simple recipe of #EggBhurji comes handy. It takes just fifteen minutes to assemble and prepare.


Ingredients:


2-3 Eggs
Potato - 1 sliced into thin wedges
Onion - 1 sliced thinly
Capsicum -  1/2 sliced thinly
Tomato - 1 sliced thinly
Salt to taste
Turmeric and Chilli powders : 1/4 teaspoon each
Coriander leaves to garnish


Method:


Beat the eggs and keep aside.

Heat vegetable oil in a pan or kadhai. Add potato slices and fry lightly. Add onion and fry. When onion and potato pieces have browned add capsicum slices and toss. Add tomato slices and cook till soft.

Add turmeric and chilli powder. Toss and add the beaten eggs to the pan. Stir continuously so that the egg doesn't stick to the sides. If required add a little oil or butter. Add salt and stir.

If you want your bhurji dry, keep stirring till all items have mixed together and remove from heat. It you want it a little moist, add 1/4 cup water and cover.

Remove from heat after 2-3 minutes and garnish with coriander leaves.
